Dieting and Eggs

October is ‘Crack an Egg’ month. Yes, eggs are good for you. If you are looking for a quick, nutritious meal never be frightened to use your egg allowance. Eggs are one of the most complete, naturally produced foods. They contain vitamins A, D, E, B12 and niacin. They also contain the minerals calcium, zinc and iron. All ‘Lion Quality’ eggs are now stamped with a best before date on the shell, so you can enjoy these eggs at their maximum freshness.

There is much talk now about organically produced foods and eggs are not exempt from categories. In general, eggs marked ‘organic’ are from hens that live in a barn freely during the day and have access to organic land. Their feed is also from an organic source. ‘Free range’ eggs are also from hens allowed to roam freely in a barn and have access to grassland. However, this is not necessarily organic land. ‘Barn eggs’ get their name because these egg producing hens are kept in barns, living freely but they do not have access to the outside. ‘Fresh’ eggs come from hens kept in cages under carefully managed conditions.

Eggs are brilliant boiled, used in recipes, scrambled, poached and dry fried but please remember to never fry using oil. The organic eggs are obviously the most expensive with the fresh eggs being the cheapest. It is up to you which you decide to buy.
