Turkey fillets a l'orange

Ingredients

  • 4 x 4oz turkey fillets or escalopes
  • 2 teaspoons oil
  • quarter pint chicken stock from half a cube
  • juice and finely grated rind of one orange
  • 4oz button mushrooms halved
  • salt and white pepper to taste
  • 1 dessertspoon finely chopped parsley
  • 2 teaspoons white thickening granules

Turkey Recipe Instructions

Beat the fillets or escalopes flat. Heat oil in a non-stick pan and brown fillets lightly on both sides. Add the chicken stock, orange juice and rind and mushrooms and bring to the boil. Lower heat and simmer gently for five or six minutes. Season to taste with salt and pepper and stir in the parsley. Remove pan from heat and when juice stops bubbling, stir in the thickening granules. Serve immediately.
