CARROTS could become.....            

the super heroes of food.

There is now extensive scientific evidence that carrots may help prevent conditions as diverse as cancer and heart disease. 
Dr Catherine Rice-Evans, an expert in biochemistry and director of the Free Radical Research Unit at Guy's Hospital, London, confirms that carrots are rich in beta-carotene - a powerful antioxidant.  Many diseases involve an excess of 'free radicals' (molecules that occur naturally in the body) - antioxidants like beta-carotene neutralise these free radicals.  (Beta-carotene is also present in green leafy, yellow and orange vegetables.)  The World Health Organisation now recommends that adults eat at least one pound of fruit and vegetables a day (not including potatoes) and the United States Government recommends that adults have between five and nine servings of fruit and vegetables a day.  Plus, of course, you may well see better in the dark!
