Chicken Tikka and Mango Kebabs

Ingredients

4 x 5oz chicken breasts. skimmed and boned 2 green peppers

250g carton low fat natural yogurt 4 celery sticks

½ (100g) jar tandoori paste 1 tablespoon sunflower spread

2 fresh mangoes salt and black pepper

Indian Food Recipe

Cut the chicken breasts into 1 inch pieces. Mix together the yogurt and tandoori paste. Stir in the chicken pieces. Leave in the marinade for at least 3 hours (preferably overnight) Skin and cut the mangoes into 1 inch pieces. Rinse, remove seeds and cut the pepper into 1 inch pieces. Wash the celery and cut into pieces. Remove the chicken from the marinade and thread on to the skewers alternating with the mango and vegetables. Brush the vegetables with the melted sunflower margarine and sprinkle with salt and freshly ground pepper. Cook under a hot grill for 7-10 minutes, turning frequently. Serve on shredded iceberg lettuce with lemon wedges and the yogurt with cucumber and mint sauce.

Sauce

2 x 125g low fat natural yogurt pinch cayenne pepper

3 inch piece of cucumber, peeled and coarsely grated ½ teaspoon salt

1 tablespoon chopped mint freshly ground black pepper

Place the yogurt in a mixing bowl and whisk until smooth. Add all the other ingredients. Mix well. Chill and store in refrigerator until needed.
