Cucumber and mint relish
Chicken Recipe Instruction Cut the chicken into strips - 2” x ½” and place in a shallow dish. Blend together the yoghurt, chilli, onion, garlic, turmeric, lime rind and juice in a food processor, season, pour over the chicken, cover and leave to marinate for 8 hours or overnight. Thread the chicken strips onto wooden skewers and grill for 8 minutes, brushing with marinade and turning. Make the relish by beating together the yoghurt and juice, season, stir in the cucumber and mint and spoon into a bowl rubbed round with a cut garlic. To serve garnish with salad leaves and lime slices and hand round the bowl of relish. |
