Rock Cakes

Makes 12 158 cal per cake

  • 12oz/350g plain flour
  • 2tsp baking powder
  • 3oz/75g quark
  • 3oz/75g caster sugar
  • 3oz/75g raisins
  • Zest of 1/2 lemon
  • 3fl oz/75ml skimmed milk
  • 4oz/100g glace cherries, cut in half
  • Apricot jam to glaze

 

Method

Preheat oven to 180C/350F/Mark 4.  Sift flour and baking powder into large bowl.  Rub in quark.  Add sugar, raisins and lemon zest, mixing well.  Combine with milk.  Shape mixture into 12 balls and place on a non-stick baking sheet.  Decorate with the cherries.  Bake in oven for 20-25mins.   When cooked, glaze each cake with a little apricot jam.    Sent in by Jackie Banks, Woods Methodist
