Apple Turnovers

  • 1lb/480g Bramley apples
  • 1 level tsp ground cinnamon
  • 1/2 level tsp ground nutmeg
  • 2 level tsp Demerara sugar
  • 1oz/25g plump sultanas
  • 2 sheets filo pastry
  • 1 egg

Method

Preheat the oven to 200C/400F/Gas 6.  Peel, core and chop the apples and place in a pan with the cinnamon, nutmeg, sugar and sultanas.  Cover and cook over a low heat for 10mins.  Cut each pastry sheet into 3 long strips.  Beat the egg.  Brush a strip with a little egg and place some apple at one end and fold up to form a triangle.  Keep on folding until the whole pastry strip is used.  Repeat, making 6 turnovers in total.  Brush the surface of the pastries with the remaining beaten egg and bake on a non-stick baking sheet for 20mins, or until crisp and golden.  Serve warm.

Filo pastry is an ideal low-fat alternative to shortcrust or puff pastry.  Cover the sheets with a damp cloth when preparing the turnovers to stop the pastry drying out.
