Banana & Gingerbread Slices

  • 10oz plain flour
  • 4tsp ground ginger
  • 2tsp mixed spice
  • 1tsp bicarbonate of soda
  • 4oz soft light brown sugar
  • 4tbsp sunflower oil
  • 2tbsp black treacle
  • 2 eggs
  • 4tbsp orange juice
  • 3 bananas
  • 4oz raisins

Method

Preheat oven 180C/350F/ Gas 4.  Lightly grease and line a 72 x 11” baking tin.  Sift flour into bowl with spices and bicarbonate of soda.  Mix sugar with some of the flour and sift into bowl.  Make a well in centre, add oil, black treacle, eggs and orange juice.  Mix thoroughly together.  Mash bananas, add to bowl with raisins and mix together well.  Pour mixture into tin and bake for about 35-40mins.  Leave cake in tin and cool for about 5mins.  Turn out on to a wire rack and leave to cool completely.  Cut into 20 slices.  148 cals per portion
