Apple Teabread
- 8 oz self raising flour
- 8 oz sultanas
- 8 oz carrots (grated)
- 2 oz apple (grated)
- 10 fl oz apple and cinnamon herbal tea
- 2 eggs
- 1 teaspoon cinnamon
- 1 cooking apple (sliced)
- sweetener if required
Method
Soak sultanas, carrots and apple in tea with cinnamon overnight. Add flour and eggs. Mix well. Lightly grease 2lb loaf tin or 7" round tin. Put half mixture in tin, place sliced apple on top, put on rest of mixture. Bake in preheated oven gas mark 5 for one and a half hours. Divide into 30 slices
