Apple Medley
Serves 1.
- 1 red-skinned eating apple
- low calorie squash (1 tablespoon diluted with a quarter pint of water)
- 1 slice bread
- 2 oz cottage cheese
- quarter teaspoon of cinnamon
Method
Core and slice the apple. Put into flameproof dish with squash. Poach in centre of moderate oven (350 degrees F or Gas mark 4) until tender. About 15 - 20 minutes. Toast bread on one side only. Spread untoasted side with cheese and arrange apple slices on top. Sprinkle with cinnamon and baste with a little juice remaining in the dish. Lightly brown under grill. Serve hot.
