Ruby Bacon Chops
Serves 4
- 1 ruby grapefruit
- 4 lean bacon loin chops
- 45ml/3tbsp redcurrant jelly
- black pepper
Method
- Cut away all the peel and pith from the grapefruit, using a sharp knife, and carefully remove the segments, catching the juice in a bowl.
- Fry the bacon chops in a non-stick frying pan without fat, turning them once, until golden and cooked.
- Add the reserved grapefruit juice and redcurrant jelly to the pan and stir until melted. Add the grapefruit segments, then season with pepper and serve hot with fresh vegetables.
