Pork and Prune Stir-Fry
Serves 4.
- 400g/14oz lean pork leg steak
- 20ml/4tsp soy sauce
- 15ml/1 tblsp balsamic vinegar
- 30ml/2tblsp dry sherry
- 2 small spring onions
- 1 small red onion
- 50g/2oz mushrooms
- 50g/2oz courgettes
- 1 small red or yellow peper
- 10ml/2tsp olive oil
- 75g/3oz ready-to-eat prunes
- 15g/1/2oz walnuts
- Salt & freshly ground black pepper
- Fresh herbs to garnish.
Method
1. Cut the pork steak into thin strips and place in a non-metalic dish with the soy sauce, balsamic vinegar and sherry. Marinate for 30 mins. 2. Finely chop the onions, slice the mushrooms, carrots and courgettes and cut the pepper into thin strips. 3. Cook the pork in a non-stick frying pan for 6 - 7 mins. Drain off any excess juices. Add the prunes. Serve, season if required and decorate with walnuts. Use of oil optional in frying.
