Microwaved Tuna Hash
Serves 1
- 2 medium potatoes, scrubbed
- 1 small onion, peeled and finely chopped
- 1tbsp tomato puree
- 4tbsp skimmed milk
- Dash of Worcestershire sauce
- Salt & pepper
- 200g drained tuna in brine
- 2 tomatoes, chopped
- 2 level tbsp chopped fresh parsley
Method
- Chop potatoes into 1/2in chunks, place in a bowl with the onion and add 4tbsp of water.
- Cover and cook on high for 8mins.
- Mix tomato puree, milk, Worcestershire sauce and seasoning together.
- Add to the potato with the tuna, tomatoes and parsley.
- Stir well and cook on high for 2mins or until heated through.
- Serve with salad.
- Not suitable for freezing.
