Microwaved Tuna Hash

Serves 1

  • 2 medium potatoes, scrubbed
  • 1 small onion, peeled and finely chopped
  • 1tbsp tomato puree
  • 4tbsp skimmed milk
  • Dash of Worcestershire sauce
  • Salt & pepper
  • 200g drained tuna in brine
  • 2 tomatoes, chopped
  • 2 level tbsp chopped fresh parsley

Method

  1. Chop potatoes into 1/2in chunks, place in a bowl with the onion and add 4tbsp of water.
  2. Cover and cook on high for 8mins.
  3. Mix tomato puree, milk, Worcestershire sauce and seasoning together.
  4. Add to the potato with the tuna, tomatoes and parsley.
  5. Stir well and cook on high for 2mins or until heated through.
  6. Serve with salad.
  7. Not suitable for freezing.
