Lemon Baked Turkey Thighs

Serves 4

  • 4 skinned turkey breasts
  • pepper
  • half a lemon - sliced
  • 1 oz low fat spread
  • 2 tablespoons chopped parsley

Method

  1. Season turkey thighs and place in ovenproof dish just large enough to hold them.
  2. Halve the lemon slices and tuck them into the spaces between the turkey pieces.
  3. Top with the spread.  Bake 190C/375F/Gas 5 for forty minutes.
  4. Serve with jacket potato and salad.
