Vegetable Bake

Serves 2

  • Selection of  vegetables
  • 4 oz mushrooms - washed
  • cup of breadcrumbs - preferably wholemeal
  • half pint vegetable stock
  • 1 teaspoon mixed herbs

Method

  1. Partly cook the vegetables, chop them up and place in layers in a large ovenproof dish.
  2. Sprinkle the mixed herbs between each layer and finally slice the mushrooms and place over the top of the vegetables.
  3. Sprinkle with the breadcrumbs and then moisten the contents of the dish  with the vegetable stock.
  4. Bake in a moderate over (350F/gas 4) for twenty minutes until piping hot.
