Summertime  Waldorf

Serves 2

  • 12 ounce cooked brown rice or pasta shapes (cold)
  • 8 - 10 ounce cooked diced chicken or turkey
  • 1 large peeled and cored sharp eating apple (diced)
  • handful walnuts (halved)
  • 4 ounce fromage frais or tablespoon reduced calorie mayonnaise
  • black pepper and lo salt to taste

Method

  1. Mix together well, serve with grilled tomato and lightly cooked broccoli.
