Summertime Waldorf
Serves 2
- 12 ounce cooked brown rice or pasta shapes (cold)
- 8 - 10 ounce cooked diced chicken or turkey
- 1 large peeled and cored sharp eating apple (diced)
- handful walnuts (halved)
- 4 ounce fromage frais or tablespoon reduced calorie mayonnaise
- black pepper and lo salt to taste
Method
- Mix together well, serve with grilled tomato and lightly cooked broccoli.
