Tangy Beef Stir-Fry
Serves 3-4
- 4 ounce quick frying steak
- 1 red pepper
- 6 spring onions
- 8 ounce pineapple chunks in juice
- 4 tablespoons soy sauce
- 2 tablespoons dry sherry (optional)
- 1 level tablespoon cornflour
- 2 teaspoons vegetable oil
- 6 ounce button mushrooms
- 5 ounce bean sprouts
Method
- Cut beef into strips.
- Chop deseeded pepper and onions.
- Drain pineapple, reserve three tablespoons of juice.
- Mix soy sauce, sherry and pineapple juice with cornflour.
- Heat oil in a non-stick pan and add pepper, mushrooms and onion.
- Stir-fry for two minutes.
- Add bean sprouts, pineapple and beef.
- Stir-fry for a further two minutes.
- Add sauce and stir-fry for a final two minutes.
- Serve immediately.
