Tangy Beef Stir-Fry

Serves 3-4

  • 4 ounce  quick  frying steak
  • 1 red pepper
  • 6 spring onions
  • 8 ounce pineapple chunks in juice
  • 4 tablespoons soy sauce
  • 2 tablespoons dry sherry (optional)
  • 1 level tablespoon cornflour
  • 2 teaspoons vegetable oil
  • 6 ounce button mushrooms
  • 5 ounce bean sprouts

Method

  1. Cut beef into strips.
  2. Chop deseeded pepper and onions.
  3. Drain pineapple, reserve three tablespoons of juice.
  4. Mix soy sauce, sherry and pineapple juice with cornflour.
  5. Heat oil in a non-stick pan and add pepper, mushrooms and onion.
  6. Stir-fry for two minutes.
  7. Add bean sprouts, pineapple and beef.
  8. Stir-fry for a further two minutes.
  9. Add sauce and stir-fry for a final two minutes.
  10. Serve immediately.
