Low Calorie Quiche
Serves 1
- 8oz frozen mixed vegetables
- 8oz tin corned beef
- 4oz cottage cheese
- 4 eggs
- 1 tomato
Method
- Chop corned beef.
- Arrange in oblong dish with mixed vegetables.
- Beat eggs and then mix in cottage cheese.
- Pour over corned beef and vegetables.
- Arrange sliced tomato on top.
- Bake at 150c for approx 1 hour or until set.
