Low Calorie Quiche

Serves 1

  • 8oz frozen mixed vegetables
  • 8oz tin corned beef
  • 4oz cottage cheese
  • 4 eggs
  • 1 tomato

Method

  1. Chop corned beef.
  2. Arrange in oblong dish with mixed vegetables.
  3. Beat eggs and then mix in cottage cheese.
  4. Pour over corned beef and vegetables.
  5. Arrange sliced tomato on top.
  6. Bake at 150c for approx 1 hour or until set.
