Cumberland Pie

Serves 2

  • 1lb potatoes cut into small chunks
  • 8oz carrots thickly sliced
  • salt and freshly ground black pepper
  • 1 large onion chopped
  • 8oz swede cut into small cubes
  • 1lb lean minced beef
  • 2 bay leaves
  • 1 beef stock
  • 2oz Wensleydale grated cheese
  • little milk

Method

  1. Cook minced beef,  drain off fat, pour boiling water over, then drain again and put to one side.
  2. Cook potatoes and carrots together till tender, dry-fry swede and onion until soft, add beef, stirring till brown, add bay leaf, stock cube, quarter pint of water, salt and pepper.
  3. Bring to the boil then cover and simmer for about 20 minutes.
  4. Drain potatoes and carrots and mash with a little milk and black pepper.
  5. Put mince in flameproof dish and cover with potato and carrot mixture, sprinkle with cheese.
  6. Cook under preheated grill until golden.
