Cumberland Pie
Serves 2
- 1lb potatoes cut into small chunks
- 8oz carrots thickly sliced
- salt and freshly ground black pepper
- 1 large onion chopped
- 8oz swede cut into small cubes
- 1lb lean minced beef
- 2 bay leaves
- 1 beef stock
- 2oz Wensleydale grated cheese
- little milk
Method
- Cook minced beef, drain off fat, pour boiling water over, then drain again and put to one side.
- Cook potatoes and carrots together till tender, dry-fry swede and onion until soft, add beef, stirring till brown, add bay leaf, stock cube, quarter pint of water, salt and pepper.
- Bring to the boil then cover and simmer for about 20 minutes.
- Drain potatoes and carrots and mash with a little milk and black pepper.
- Put mince in flameproof dish and cover with potato and carrot mixture, sprinkle with cheese.
- Cook under preheated grill until golden.
