Choc and Orange Mousse

Serves 4
- 2 level ta blespoons cocoa powder
- 3/4 pint skimmed milk
- 2 eggs, size 3
- 1 orange
- 1 level tablespoon cornflour
- 1 sachet gelatine
- 1 teaspoon liquid sweetener
- 4 level tablespoons Greek yogurt
Method
- Place cocoa, egg yolks, cornflour sweetener and milk in a pan.
- Grate rind of orange and add half to the chocolate mixture with the juice of the orange.
- Heat gently, stirring until it thickens and coats the back of a spoon.
- Cover with damp greaseproof paper to prevent a skin forming until cool.
- Sprinkle gelatine over 2 tablespoons water in a small basin and leave to soak for 5 minutes.
- Stand it in a pan of hot water until dissolved, then stir into the chocolate mixture.
- Whisk egg whites until stiff and fold into chocolate mixture.
- Divide between four serving glasses and leave to set in refrigerator.
- Serve decorated with yogurt and remaining orange rind.
