Rich Christmas Cake(Makes 18cm/7 in cake) - Serves 20 240 cals per slice

Christmas Cake Recipe Instructions Preheat the oven to 170C/325F/Gas3. Double line the base and sides of an 18cm/7in deep-sided round cake tin with greaseproof paper. Sift the flour and spices together. Add the remaining ingredients to the bowl, beat together well and then spoon the mixture into the lined cake tin. Bake the cake for 2 hrs, covering it with greaseproof paper after an hour to prevent it from over-browning. Cool completely. Roll out the fondant on a flat surface dotted with icing sugar to prevent it from sticking. Using a star-shaped pastry cutter, stamp out 10 stars. Brush each one with a little apricot conserve and press against the sides and top of the cake. Decorate in addition accordingly.
