Port and Lemon Mincemeat

Ingredients

  • 250g (8oz) ready to eat dried figs
  • 250g (8oz) ready to eat dried apricots
  • 500g (1lb) dessert apples
  • 250g each sultanas,raisins and currants
  • 125g (4oz) Blanched almonds chopped
  • Juice 1 large orange
  • Grated rind and juice 3 lemons
  • 4 level teaspoons ground mixed spice
  • 2 level tsp ground cloves
  • 8 Tbsp clear honey
  • 4Tbsp port

Christmas Recipe Instructions

Chop the figs and apricots core and peel and chop or grate apples. Mix all the fruit together in a large bowl with the almonds add the orange juice lemon rind and juice spices honey and port. Mix well and leave overnight. Then stir thoroughly. Spoon into suitable containers cover and store in the fridge for two weeks for flavours to mature, stirring occasionally. (Can be frozen).
