Lentil Loaf

With Chestnut & Herb Stuffing

Ingredients

  • 225g green lentils
  • 1 vegetable stock cube
  • 1 large onion, finely chopped
  • 2 carrots, finely grated
  • 115g mushrooms, finely chopped
  • 25g chopped mixed nuts
  • 75g fresh white breadcrumbs
  • 2 tblsp chopped fresh parsley
  • 2 tblsp soy sauce
  • 2 eggs, beaten
  • 50g herb stuffing mix
  • 115g tinned chestnuts, drained weight

Vegetarian Recipe Instruction

Pre-heat the oven to 190c, 375f, gas mark 5 Place the lentils in a large saucepan and cover with plenty of water. Add the stock cube and bring slowly to the boil, then boil rapidly for 10 minutes. Reduce the heat and simmer for 20 minutes until tender. Drain and set aside. Dry fry the onions and carrots gently until soft. Add the mushrooms and cook for a further 3 - 4 minutes. Transfer to a Large bowl and add the lentils, mixed nuts, breadcrumbs, parsley and soy sauce. Mix well. Add the beaten egg and mix again.Very lightly grease a 2lb loaf tin and line. Pile Half the lentil mixture into the tin and press down well. Mix the stuffing mix with 150ml cold water and add the chopped chestnuts. Spoon over the lentil mixture in the tin and then cover with the remaining lentils.
