Nutty Stuffing

Ingredients

  • ½ teaspoon walnut or vegetable oil
  • 1 small onion, roughly chopped
  • 2 teaspoons chopped fresh sage (or 1 teaspoon dried)
  • 2 teaspoons chopped fresh thyme (or 1 teaspoon dried)
  • ½ teaspoon grated lemon rind
  • 1 egg
  • 6oz fresh brown breadcrumbs
  • salt and pepper
  • 2½ oz chopped almonds

Christmas Recipe Instructions

Heat the oil and sauté the onion for 1 minute to soften. Transfer to a blender or food processor and add the herbs, lemon rind, egg, breadcrumbs and seasoning. Blend for 10-15 seconds. Form the mixture into 24 small balls, then roll each one in the chopped nuts. Roast on a baking sheet for 30 minutes at 180ºC, 350ºF
