Chinese Garlic Mushrooms

Ingredients

  • 8 Large open mushrooms
  • 3 Spring onions sliced
  • 1 Clove garlic crushed
  • 30ml/2 tbsp oyster or light soy sauce
  • 285g/10oz packet marinated tofu, cut into small dice
  • 200g/7oz can sweet corn, drained
  • 10ml/2tsp sesame oil
  • Salt & pepper

 

Healthy Recipe Instructions

Pre Heat oven to 200c/400f/gas Mk 6. Finely chop the mushrooms stalks and mix with the spring onions, garlic and the oyster sauce. Stir in the tofu and sweet corn, season well with salt & pepper, then spoon into the mushrooms. Brush the edge of the mushrooms with the oil. Arrange on a baking tray and back for 12-15 minutes, until the mushrooms are just tender. Serve at once.
