Spiced Prawn Cocktail
Ingredients
Chop the coriander and place in a bowl. Stir in the creme fraiche and season. De-seed and slice the chilli, chop the spring onions. Heat the oil in a large non-stick frying pan and fry the chilli and onions for two mins. Add the lime juice and honey. Remove from the heat, fold into the creme fraiche with the prawns. Reserve some small central lettuce leaves. Shred the remaining leaves and place in the base of 8 glass dishes. Position the small cos lettuce leaves in the dishes and spoon in the prawns. Serve garnished with the chilli slices. (Make sure the prawns are completely thawed before using.)
