Prawn And Grapefruit Cocktial

Serves 4.

  • 2 pink grapefruits
  • 8oz peeled prawns
  • salad leaves
  • sprigs of mint or cucumber  to garnish


Sauce

  • 2 tablespoons reduced calorie mayonnaise
  • 2 tablespoons natural, low-fat yoghurt
  • 4 teaspoons tomato ketchup
  • 1-2 drops  hot pepper sauce to taste

Method:

Peel grapefruit and remove pith, cut between membrane to remove the segments and cut one in half.
Mix prawns and grapefruit segments together.
Line 4 small bowls with salad leaves and divide prawns and grapefruit mixture between them.
Mix sauce ingredients together, adding hot pepper sauce last.  Chill until needed.
Spoon the seafood sauce on top of the prawns and grapefruit and garnish with mint or cucumber.

Ideal as a starter for those who enjoy entertaining
