Hot gingered clementines
Serves 1 - 168 calories
- 8 clementines, peeled
- 1 ounce canderel
- half-pint orange juice
- 1 piece stem ginger, cut into thin strips
- quarter pint ginger wine or ginger ale
- few pistachio nuts or chopped
- 2 teaspoons arrowroot
- hazelnuts to decorate
Method
- Soak the clementines in hot water for five minutes.
- Drain and scrape away all the pith.
- Place the orange juice, ginger wine or ale and sugar in a pan and simmer gently until hot.
- Blend the arrowroot with a little water and add to the pan.
- Simmer until thickened, stirring all the time.
- Add the clementines and stem ginger and simmer for fifteen minutes.
- Serve hot, decorated with nuts.
