Tomato Soup Recipe

Ingredients 

  • 1lb tomatoes (ripe or over-ripe)
  • ½ tablespoon sunflower oil
  • 1 small potato (sliced)
  • 1 onion chopped
  • ¾ pint skimmed milk
  • ¾ pint chicken stock
  • 1oz low-fat margarine
  • salt and black pepper
  • 1-2 teaspoon sweetener to taste
  • natural yogurt

Soup Recipe Instructions

Using a sharp knife, slice the tomatoes then chop them roughly, leaving the skins on. Heat the oil and low fat margarine in a saucepan, add the sliced potato, onion and tomatoes and cook gently for 5-6 minutes or until they begin to soften. Stir in the milk, chicken stock, sugar and salt and pepper. Simmer uncovered for 15 minutes until the potato is cooked. Allow the soup to cool, then liquidise in a blender or food processor. Pour into a saucepan, taste and adjust seasoning if necessary. Reheat just before serving. Pour into individual bowls, then add a swirl of yogurt.
